Known to some as Basque Burnt Cheesecake or San Sebastion Cheesecake or La Vina Cheesecake, the cake was birthed behind the swinging door at La Viña in Spain’s San Sebastián, the Basque region in the 1970s. A handful of glowing articles earned La Viña national fame about a decade ago; slowly, Basque cheesecake went global. It first caught on in Asia, particularly in Japan, Turkey, and Malaysia.

A super creamy interior baked at a high temperature for a beautiful burnt exterior.  The combination of bitterness with sweet creamy cheese helps to balance each other out. Simple as it sound to make but yet almost impossible to perfect.
